Throw out ideas of what it could have been used for. It's a couple miles from the railroad tracks but maybe a theives tunnel from stolen RR cargo? Or Prohibition days?

Prohibition did not separate Texans from their whiskey. Various means were used to avoid the authorities, but tunnels were certainly among the choices.

Early tornado shelter reinforced with beams? Would have been nice if they detailed the how far the tunnel extended or at least estimated. And pull the property records as far back as they go..talk to oldtimers for some oral history.

Wood box culverts are common out there and are still in use for drainage structures under railroad tracks. If this was ever associated with the railroad, there is a right of way "Valuation Map" that would show the structure.
Just because the railroad today is miles away... don't mean squat...
That being said... it was probably aliens.
