What is your ABV? 7 to 8%? I think my next step is to make a 5 gallon batch using that Ed Wort recipe and do about a 6 month aging before bottling. A longer wait is supposed to really mellow out the alcohol rocket fuel taste.
No rocket fuel taste at 7 weeks! Pretty much like Liebfraumilch. On Ed’s thread people talk about liking it when they tested it at transfer after a month or so. I think the slight carbonation that’s still in it makes up some for the immaturity.
I’ll try to let the other 3 1/2 gals age (and do the next batch more carefully). I ran out of my “hooch” cider after making some in 1/2 gal bottles and not siphoning it off the lees. Ended up throwing away over a fourth of what I made. Those lees are nasty. That’s why I’m opening a 1/2 gal of the wine for the election. The cider I’m making now I’ll siphon into 1/2 gal bottles after the ferment- I learned my lesson!
Oh, and the “hooch” cider I’m making turns out very nice after another few days aging, very much like a Reisling wine. If I can keep more of the carbonation without special equipment it will be delicious. I’ve been very fearful of rocket bombs. Intend to try the Safale ale yeast too.
Can only guess at the wine’s ABV, I’d say it’s a little on the high side of Ed’s estimated 6 to 8%. ‘Course I wasn’t very faithful to Ed’s recipe. Can’t imagine what effect the quart of applesauce I added had LOL!
