MUSTARD OIL

Posted on 04/14/2012 6:17:05 PM PDT by mamelukesabre

Mustard oil is amazing! I use it to cook everything now. You know that hot spicy mustard sauce they have in Chinese restaurants? This stuff has that same fiery zing even though its just cooking oil. I like it almost as much as Worcestershire sauce.

Okay but sometimes you can’t get it so you have to make your own. At least where I am.

Mustard oil is also being touted as a ‘health’ item. Since its so prevalent in Indian cooking I’m going to guess its part of the Ayurvedic health grouping.

Could y’all get on libertarian27’s weekly FReeper recipe ping? I could have missed this otherwise, and there are lots of folks on that thread who *love* their spicy stuff.
Just consider it a public service. :)

Being an entrepreneur, I am always looking for a need that is not filled.

I love Indian spices and Chinese sauces. Problem is, I don’t trust foreign sources for such things. Some of those guys would poison a customer for a dollar.

Someone needs to start growing the herbs and spices and making organic spices and such right here in America.

I would buy it if I could find it.

I’ll have to try the mustard.
Two years ago I developed an allergy to peppers and tomatos.
I get hives and my throat swells up and I have difficulty breathing if I eat them. I can’t think of a worse curse. Everything good has tomatos or peppers or both.
The mustard oil might be just what I need to give things a zing.

Anybody else try “The Man”???

About a decade ago I was in town visiting Microsoft. My hosts took me to Dixies for lunch one day. After going through the black lady's soup nazi-style ordering we went outside to eat.

An old black guy was wandering around with a pot ladling "The Man" onto folks sandwiches. My host told him to SLOP some on my sandwich. Which he did. Then they proceeded to laugh uproariously while I tried to eat it. It was too freaking hot.

This was 2001. They did put some of The Man into a very small pimento jar to take home with me as a souvenir. Do you know, 11 years later I STILL have that jar in my fridge! I use it, in very small amounts, to flavor spaghetti and chili sauces. It's never gone bad. I think mold is scared of it.

A few notes (a useful list that would be good to save):

Some chefs now regard the “ultimate” sauce as a 50/50 mix of Worcestershire sauce and Tabasco Sauce.

The two together are the western equivalent of Chinese Five Spice Powder, which is supposed to be a perfect blend of Yin and Yang ingredients to achieve culinary balance.

Except it is a near perfect blend of sweet-sour-salty-bitter-savory(umami)-spicy(piquance), so when added to recipes that have fats (fatty or oily taste), it covers most the taste spectrum, except for coolness (minty, menthol or camphor), astringent (alum or lemon), heartiness (as from alcohol), and numbness (such as from nutmeg or clove).

To create a functional balance of combinations of the above in your cooking turns ordinary food into something special.

*******************

Otherwise, it’s important to know that mustard and other spicy foods are known to irritate cells in the intestine that could impact inflammatory conditions from IBS to arthritis. However the cure for this is simple: peppermint. For some reason peppermint soothes these cells, and can help alleviate some of these problems.

So if you have such problems, but like spicy food to include mustard, be sure to finish off your meal with some real peppermint candies, or some Altoids.

Are you sure you aren’t thinking of nightshade(tomato, pepper, eggplant, etc)? I’ve never heard of the mustard family(cabbage, cauliflower, broccoli) having any harmful side effects.

That old black man was Mr. Porter, the owner. He died last year.
I had three scoops on my sandwich. And yes, it was like a nazi soup kitchen going through her line :>)
