Copied directly from my grandmother's recipe:
3 cups ground almonds
1 cup sugar
4 cups cake flour
1½ tsp. baking powder
3 eggs
1 grated lemon [peel]
1 grated orange [peel]
¼ tsp. of each: cinnamon, Allspice, Clover [sic],
¼& lb. butter. [I find I use MUCH more butter, general ¾ lb. Also, it needs to be melted.
Further, I use about 1 lb. of jam.]
Mix Amonds and sugar with flour and Baking powder in large bowl. Add orange, lemon and spices.Make a little hole in the middle and brake egg into it. Mix one at the time. Add melted butter. Mix well.
Divide dough into three parts. Take one part on floured board and roll out to a little larger in size than bottom of cake pan. [Grandma meant a springform pan about 9" in diameter and about 4" tall.] It will form a little ridge. Press gently in lightly greased cake pan. [This is the bottom layer. After rolling the dough on the board, I slice the layer into four parts, like a pizza, and transfer each part to the bottom of the cake pan. The edges should go up each side about one inch.] Press ridge against pan. With a spoon spread jam (either strawberry, or raspberry or current) [This is the first time Grandma mentions JAM in the recipe! HA!] Not too thick ( not too thin either). Take sec. [-ond] part of dough. Repeat as with first part.
With third part, roll out ½-inch thick sausages [for you lurkers, NOT REAL MEAT SAUSAGES. Grandma meant to roll the dough out as before, but this time slice it into strips about ½ inches wide.], lay over jam in criss-cross fashion. Lay one piece around cake pan as a boarder [sic]. Make design with fork. Brush well beaten egg.
Bake in moderate heated oven. 350 degrees [Fahrenheit] or less for one hour.
Before cutting store for at least 24 hrs.
