Why would they not set up their own wireless and dedicated line for the demo? I guess Google had similar problems recently...how can you let that happen...

I'm sure they did.

But Wi-Fi is an unlicensed band, and all of those devices were sharing a relatively small amount of bandwidth. So, their own AP would have been competing with everyone else.

they did... but there are only so many channels of WIFI available... and there were 570 being used in that one room. I would say that was overload. Someone was on the same channels they were using.

Even if you set up your own access point, you're still fighting with 500+ other wireless devices in the room for the actual radio waves they all share.

OTOH, maybe they could have asked Moscone Center to use only lower channels for all their wireless access points for visitors, such as 1-8, so Apple could set theirs at 11, now all alone in its frequency range. But they probably didn't know this was going to happen. Oh well, live and learn.
