How is everyone else answering? Don't like that they ask my race/ethnicity for congressional districting. They tend to assume that because I am Hispanic, that I am a Democrat. Can I choose to only answer how many people are living here and send it in that way?

Does the government have an official color chart, like a paint store, that they can hold up to your face to determine what color you are, legally?
Is there ANY statute defining what color “Black” is, or “White”?

Bad legal advice. You are required by law to answer honestly, and those laws have been upheld under review.
However, it is unlikely someone would be prosecuted.
It seems to me the best way to screw it would be to list a mixed race, and you can always tell them your aunt had told you you had some Injun blood in you...

That's what I did, you can expect that you will get a visit from a door to door canvasser. They will try to convince you that you must fill it all out in detail. You tell them to "get lost" and then they tell you there is a $250 fine for noncompliance (which is BS). they may come back two or three times, stick to your guns and they stop at three revisits. I know that is what happened ten years ago as I worked the 2000 Census and there was a lot of noncompliance back then as well.
I made a copy of section 1, article 2, paragraph 3 of the U S Constitution which authorizes an "enumeration" (a numerical count) of all free citizens and nothing more. I enclosed that with the form and said "sorry, that's all you get".
I expect that someone will come calling while I am "cleaning my shotgun".

It’s funny. Every generation puts down different things. The first Americans (Puritans) for many years only put down how many in household. Then they started putting down how man of each sex, for instance 3 males between age 10 and 20.
The census ledgers have names across on a line. They do ask occupation, if you could read or write English, and what country or state you and your parents were born in. Also name and age, age at marriage, and occupation, and how many in school. In the thirties they asked if you had a radio.
Now they ask race instead of country of origin. The big difference is, a hundred years ago people trusted the government, they knew they weren’t going to have their lives interfered with. All that ended with FDR. Suddenly people started to think “1984”.

But when the right to vote at any election for the choice of electors for President and Vice President of the United States, Representatives in Congress, the executive and judicial officers of a state, or the members of the legislature thereof, is denied to any of the male inhabitants of such state, being twenty-one years of age, and citizens of the United States, or in any way abridged, except for participation in rebellion, or other crime, the basis of representation therein shall be reduced in the proportion which the number of such male citizens shall bear to the whole number of male citizens twenty-one years of age in such state."
I did that in 2000. I will likely do that again.
Hmmmm.....I think my dog, Bailey, needs to be counted too.
There's only 3 things that I found to be required...
1)How many people live at that address
2)Age of those residents
3)Sex of those residents.
