Corn Fritters - Paula Deen
Cook Time10 min
Level - Easy
Yield - 2 dozen
Ingredients
1 1/4 cus self-rising cornmeal mix
1 1/4 cups all-purpose flour
1/4 cup sugar
1 teaspoon salt
1 cup milk
2 large eggs, slightly beaten
1/4 cup (1/2 stick) butter, melted
1 (15.25 ounce) can corn, drained
Vegetable oil, for frying
Directions
Heat oil to 325 degrees F.
In a medium bowl, combine cornmeal mix, flour, sugar, and salt. In a small bowl, combine milk and eggs. Add milk mixture to cornmeal mixture, stirring well. Stir in butter and corn.
Pour oil to a depth of 2 inches in a Dutch oven, or use a deep-fryer. Drop by tablespoons into hot oil. Cook 2 to 4 minutes, or until golden, turning once. Drain on paper towels.
Oh, Amy! My mother used to make those (she called them ‘mock chicken legs’) and she would cook them on a wooden skewer! Yummy! Thank you for the recipe!

Hi Polly, Good to hear from you on this Red Friday! Congratulations on the upcoming graduation and party. My two granddaughter just graduated from college. One was on one Saturday and the other the very next Saturday. Different colleges and we partied too! Have fun and take a lot of pictures!

I think thats why I loved your little girl so good! I had that graphic for a long time and didn’t know what occasion to use it for and I thought Red Friday!
Guess I will go out and plant now. Its still dreary and damp but I must do it anyway. I can plant in pots inside the carport and have them ready!

On a related note, we don’t have a large military presence here (just recruiting stations) but whenever I see someone in uniform, you can bet they receive a handshake and “Thank You” from this old Navy vet. Happened again the other day at a Memorial Day program.
