But good corn bread is still a challenge. Use butter rather than margarine and white corn meal. The Hodg-somthing Mill white corn meal has a good recipe on the back.

Best Cornbread recipe in the world is:
2 cups cornmeal
1 tsp salt
1 tsp baking soda
2 cups buttermilk
2 eggs slightly beaten
Mix all together, and pour into a 9” hot iron skillet that you have put a tablespoon or two of oil in.
Bake at 450 degrees for about 25 minutes.

"But good corn bread is still a challenge."Use a cast iron pan. Put your heavy cast iron skillet into the oven when you turn it on to preheat. Make sure it is good and hot, and BE CAREFUL when you take it out (don't put it on your brand new countertop, like I did...). Grease it quickly with bacon grease, then pour your batter in, and put it back into the oven to bake. Serve with honey butter, bacon grease (hubby's favorite) or plain butter.
