Build A Snowman Day

National Oatmeal Muffin Day
Apple-Oatmeal Muffins

Streusel Topping:
1/4 cup flour
1/4 cup packed brown sugar
1/4 teaspoon cinnamon
2 tablespoons firm butter

Muffins:
3/4 cup milk
1/4 cup vegetable oil
1 large egg
1 teaspoon vanilla extract
1 2/3 cups all-purpose flour
1/2 cup oats – old fashioned or quick cooking (not instant)
1/2 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 cup peeled and very finely chopped or shredded apple

Preheat oven to 400 degree F.

Line a muffin tin with 12 paper liners.

Prepare topping. Stir together flour, brown sugar and cinnamon. With a pastry cutter or two forks, cut in the butter until crumbly. Set aside. I did this in a food processor.

In a medium bowl, whisk together the milk, oil, eggs, and vanilla. In a large bowl, thoroughly stir together the flour, oats, sugar, baking powder, salt and cinnamon. Add liquid mixture and apples to flour mixture. Divide evenly among muffin cups.

Spoon about 1 tablespoon streusel mixture on top of each muffin. Bake for 20 minutes or until golden around edges

A Christmas Carol Day

Greetings From Space

Chocolate Pizza Day
Directions 1 pound homemade pizza dough, recipe follows, or purchased pizza dough
2 teaspoons butter, melted
1/4 cup chocolate-hazelnut spread (recommended: Nutella)
1/2 cup semisweet chocolate chips
2 tablespoons milk chocolate chips
2 tablespoons white chocolate chips
2 tablespoons chopped hazelnuts, toasted

Position the oven rack on the bottom of the oven and preheat to 450 degrees F.
Line a heavy large baking sheet with parchment paper. Roll out the dough to a 9-inch-diameter round. Transfer the dough to the prepared baking sheet. Using your fingers, make indentations all over the dough. Brush the dough with butter, then bake until the crust is crisp and pale golden brown, about 20 minutes. Immediately spread the chocolate-hazelnut spread over the pizza then sprinkle all the chocolate chips over. Bake just until the chocolate begins to melt, about 1 minute. Sprinkle the hazelnuts over the pizza. Cut into wedges and serve.

Ingredients
Pizza Dough:
1/2 cup warm water (105 to 110 degrees F)
2 teaspoons active dry yeast
2 cups all-purpose flour, plus more for kneading
1 teaspoon salt
3 tablespoons olive oil, plus more for bowl

Mix the warm water and yeast in a small bowl to blend. Let stand until the yeast dissolves, about 5 minutes. Mix the flour and salt in a food processor to blend. Blend in the oil. With the machine running, add the yeast mixture and blend just until the dough forms. Turn the dough out onto lightly floured surface and knead until smooth, about 1 minute. Transfer the dough to a large oiled bowl and turn the dough to coat with the oil. Cover the bowl with plastic wrap and set aside in a warm draft-free area until the dough doubles in volume, about 1 hour. Punch the down dough and form into ball. The dough can be used immediately or stored airtight in the refrigerator for 1 day.

Yield: 1 (16-ounce) ball of pizza dough

You ask me....
Whence comes these legends and these stories?...
Comes these tales of higher water? (pronounced highah watah)

I would answer.... I would tell you.....
From the lakes and from the rivers....
From the swamps of Mississippi....
Comes these legends and these stories...
Comes these tales of highah watah.

HEY Y'ALL!

Have you heard?

I feel like Billie's sick chicken today. :^ )
I've been fighting a cold for a couple of days.
Today I feel like I've lost the first 3 rounds.

I've been drinking Chamomile Tea with lemon and honey.
Hope it helps.

I will get some replies posted later.
If I don't get to all of them, I want to thank you for the terrific graphics,
the spiritual messages and the great company.

Have a Blessed Weekend.

Dolly, thank you for the reminder of things we should NOT give our pets. I think the poinsettia is also poison, but not sure.

I also wanted to thank you for your pictures of your hike (was it yeserday - or two days ago?) I love seeing your 'furry kids' romp and play! I'm so far behind now, I'll probably never catch up. Happy Friday!

Aedh gives his Beloved certain Rhymes

Fasten your hair with a golden pin,
And bind up every wandering tress;
I bade my heart build these poor rhymes:
It worked at them, day out, day in,
Building a sorrowful loveliness
Out of the battles of old times.

You need but lift a pearl-pale hand,
And bind up your long hair and sigh;
And all men's hearts must burn and beat;
And candle-like foam on the dim sand,
And stars climbing the dew-dropping sky,
Live but to light your passing feet.

William Butler Yeats

Aedh Tells of a Valley Full of Lovers

I dreamed that I stood in a valley, and amid sighs,
For happy lovers passed two by two where I stood;
And I dreamed my lost love came stealthily out of the wood
With her cloud-pale eyelids falling on dream-dimmed eyes:
I cried in my dream ‘O women bid the young men lay
‘Their heads on your knees, and drown their eyes with your hair,
‘Or remembering hers they will find no other face fair
‘Till all the valleys of the world have been withered away.’

William Butler Yeats

Aedh Wishes for the Cloths of Heaven

Had I the heavens' embroidered cloths,
Enwrought with golden and silver light,
The blue and the dim and the dark cloths
Of night and light and the half-light,
I would spread the cloths under your feet:
But I, being poor, have only my dreams;
I have spread my dreams under your feet;
Tread softly because you tread on my dreams.

William Butler Yeats
