I may make an apple cake, too..This is a Hummingbird cake..with bananas, crushed pinapple and pecans. I use canned apples in my apple cake and it is so easy.
I can freeze what isn’t eaten.
Cake is cooling..mess cleaned up..

We are misty ,too...It will be in the 70s tomorrow so I may go get some more groceries..I need another dessert for Saturday or Sunday if my son and family come.We’ll go out and eat..and have dessert here.

Meg, I just looked up my Hummingbird Cake recipe and it is strange. It calls for crushed pineapple, 2 cups chopped bananas, 2 cups nuts and by the nuts, it says optional. It has no apples in it. Remember the friend I visited back a month or so ago, she gave it to me and it is in her hand-writing. Does yours call for bananas? Do you think she could have left out the apples or this is just a different recipe? Just got me to thinking and I knew I had a recipe for Hummingbird Cake.

The apple cake has canned apples..Different cakes.
I use 1 cup of chopped nuts in my Hummingbird cake..if I use them at all.

Hummingbird Cake
PREPARATION:
Preheat oven to 350°.Grease and flour bundt pan..
INGREDIENTS:
3 cups all-purpose flour
2 cups granulated sugar
1/2 teaspoon salt
2 teaspoons baking soda
2 teaspoons ground cinnamon
3 eggs, beaten
1 1/4 cups vegetable oil (I use 1 and 1/3..think 1/4 will work)
1 1/2 teaspoons vanilla extract I spilled a bit more ..LOL
1 can (8oz) crushed pineapple, well drained ( I don't drain mine)
1 cup chopped pecans
2 cups chopped firm ripe banana
Cream Cheese Frosting:
16 ounces cream cheese, softened
1 cup butter, room temperature
2 pounds confectioners' sugar
2 teaspoons vanilla extract
1/2 to 1 cup chopped pecans
Sift flour, sugar, salt, baking soda and cinnamon together into
mixing bowl several times. ( I sift once and use my spatula
to throughly mix dry ingredients)
Add eggs,vanilla, and vegetable oil to the dry ingredients.
Stir and fold with a wooden spoon until ingredients are
moistened..
Fold in bananas, pineapple,nuts.
BAKE in 350 degree oven for 45 to 60 minutes..I bake mine about
55 minutes.
Let cool on rack for 20 minutes before taking it out of pan.
Let the cake cool completely before covering.
Do not beat batter! I don't frost this cake to cut down on calories as I bake it often and use it like coffee cake as well as dessert..

APPLE BLOSSOM CAKE
PREPARATION:
Preheat oven to 325°.Grease and flour bundt pan..
(I use Pam with Flour Spray nowadays..so much easier)
INGREDIENTS:
3 cups all-purpose flour
2 cups granulated sugar
1/2 teaspoon salt
2 teaspoons baking soda
1 and 1/4 teaspoons ground cinnamon
1 teaspoon apple pie spice
3 eggs, beaten (The original recipe called for two eggs..I do both..depending on how many eggs I have.)
1 1/3 cups vegetable oil
1 1/2 teaspoons vanilla extract I spilled a bit more ..LOL
1 can sliced apples ,chopped
1 cup chopped walnuts
Sift together and combine dry ingredients in large mixing bowl.Add beaten eggs and oil and vanilla, stirring until all ingredients are moistened...Gently stir in apples and nuts..Do not beat the batter.
Bake in 325 degree oven for about 1 hour 20 minutes..Recipe said an hour and a half..

I use this as an everyday sort of cake and don’t frost it and sometimes don’t use nuts....but here’s a recipe:
Cream Cheese Frosting:
16 ounces cream cheese, softened

2 pounds confectioners’ sugar
2 teaspoons vanilla extract
1/2 to 1 cup chopped walnuts

First, thank you Meg, for you sweet words re today's opening. I have loved doing these Christmas openings and music more than any others I think. Each one I think is the prettiest scene or the very best music, and then I find another one to put together with the
very best music and get excited about it. I. just. like. pretty. things. :)
Second, your first post today was such a beautiful scene, too. It was dark and Christmasy, as was today's opening. :)
Jaycee, hugs to you for pumping everybody up every day you're here. You're a jewel.
Now....since we're talking about cakes, guess who just put a Chocolate Kahuluah Cake in the oven - right after I finished glazing the Fresh Apple Cake I took out of the oven earlier this afternoon - after a trip to the vet's for a little minor surgery to repair a toenail my sweet baby somehow managed to tear almost all the way off. OUCH! Every step he took made the nail jump up - hanging on only at the very top. :( The vet trip was not in the plans for the day. Sigh. Baking was!

I am studying those two recipes right now. The Hummingbird cake is not supposed to have apples. Guess we’ve talked about Apple Cake so much (my friend Helen made a wonderful apple cake, I think I told you and put Caramel Icing on it and we would eat it at the pool.
I’m so glad you straightened me out, Megsie! I would like to make one cake and I’m not sure what kind yet. Or I might just make some cookies...”Sandies”, my hubby’s very favorite when he was here. They are not real sweet and he adored them. Now I have to see what kind of cake Billie is talking about. LOL!
