My meat chickens are not supposed to be able to fly! Just stand and sit. But one of mine just flew out of the tote on the porch!

Ha!!

Well, they are processing age next week around Wednesday. But only one of them is going to be big enough (I think it's a rooster), so we'll probably wait a bit longer for the smaller one to get big enough. I can't see processing one without doing the other too...it would pine, I'm sure. They cry for each other just in the time I carry one out to the tractor and leave the other in the tote.

It would be inhumane to process one and leave the other to pine. And this IS meant to be a humane endeavor in every way.

I'm in the process of trying to get 4 more. This experience has been very positive so far. I was concerned that the ecosystem in our backyard might be too disrupted (ie: flies, stink), but with very little effort I was able to maintain. The litter from the tote goes into the compost and has been unnoticeable and seems to biodegrade quickly and the manure that accumulates under the tractor during the day is simply hosed into the earth in the evening.

Four might tip the scale, but you never know till you try and it's a short-term commitment, no matter what.

Thanks, Ruthy! Hope your weekend was a good one! We got some work done on the garage, which SSQ will use as a staging and work area for the remodel a while. It's out of the skeeters and heat. He put a little a/c in the window, and we're going to finish putting up the radiant barrier in the ceiling today. It makes an appreciable difference!!

SSQ was on cholesterol meds for a while and HATED them, so he stopped taking them. He's working on his diet to bring the numbers down, and we're starting 2J's trick with the zin. He hasn't been back to get the numbers checked lately, but he refuses to get back on the meds.

Well, after a 24 hour period after processing, where I let the meat "age" in the fridge, I intend to smoke one and rotisserie the other.

I'm thinking Puffy means dumplings too. I don't know how to make dumplings!

I'm thinking that's the route I'll take. With everyone leaving this weekend, I can get a handle on diet/nutrition, since I have to do most of the control of that myself.

I'm thinking I'll just stop the meds for the cholesterol AND the acid reflux and see what happens.

Dumplings are pretty much biscuit dough that you simmer in stock. I've got recipes where 1. you roll them out about 1/4" thick,cut into 1 to 1 1/2 inch strips or squares and drop them in or 2. a looser dough that you just drop a teaspoon of it into a broth.

Mama used canned biscuits for dumplings. She'd peel each biscuit off the stack, then cut it into four lumps and just drop them in the boiling stew below. They were vey tasty!
Before that she made her own biscuit dough, etc, but when the canned ones came out, she liked that a lot better cause it was so much easier; no mess!

SSQ's brother has difficulty with acid reflux, so he elevated the head of his bed. He said it helped a lot. We do that anyway because the pollen in the fall and spring causes us to get stuffy heads if we're sleeping flat.

Blueberries and almonds, too...I've read up that they're good for lowering the cholesterol.

Just remember these rules when looking at your fat intake...

Saturated Fat elevates bad cholesterol
Polyunsaturated fats lowers bad cholesterol (LDL), but also lowers good cholesterol (HDL)
Monounsaturated fats lowers bad cholesterol and boosts good cholesterol. This is the one to focus on, with the poly's being ok occasionally. Steer clear of saturated fats and don't worry about "cholesterol" content...it's been shown to have little effect on the human cholesterol. It's the saturated fats that get ya. That's why eggs are ok...they have very little saturated fat.

Stay away from the fake fats...man-made fats. Crisco is the devil.
