One thing about possum innards....they're just as good the second day.
My Mama always had Potted Meat and Sardines in the pantry. Prolly cause Daddy liked to take them out on the boat with him when he went shrimping or fishing. Easy snack with crackers. Didn't need a can opener.

One Christmas someone gave me a gag gift of potted possum....run over by a lumber truck near Franklinton. It's around here somewhere. I've never opened it.
