Could you send me your recipe for the bagels? I don't like them too chewy, so it would probably work out great for me. I'd like to experiment with whole wheat flour and a seven grain mix that I have for breads.
As usual...I don't have a recipe. I know how much liquid I used, but not how much flour, so I suppose that wouldn't work for the bread machine?
But...basically I used two cups of warm water, about a tablespoon of honey just to get the yeast going, two tablespoons (or maybe almost three) of Smart Balance, two eggs, a cup or so of rye flour, and the rest whole wheat. I also threw in a little flaxmeal and some powdered milk to add a little more nutritional value, but that's not really necessary.
To make it into bagels, you let it rise once, take it out, form them by rolling them into sticks about seven or eight inches long (bigger if you like big ones) and pinching the ends together, let them rest for a few minutes before boiling them in salted water for two minutes a side, and then bake them at 425 for 25 minutes. Easy, really.
