Not usually, because we eat them so fast...but these will already be a few days old...you'll want to freeze them to make them last...else they'll go bad quick.

Joshua is up...he's eating the classic blueberry muffins I used to make...I made six with blueberries and six without, because Matthew doesn't like the blueberries...he likes his plain.

(I have big gallon baggies marked "Atkins OK" for our low-carb muffins and "NOT ON ATKINS!" for the jedi's muffins! LOL)

Blueberry Muffins
Preheat Oven 350 degrees

Combine:

1 c White All-Purpose flour
1/2 c Whole wheat flour
3/4 c Wheat Germ
1/8th tsp. Salt
2 tsp baking powder
2/3 c sugar

In a separate bowl, combine:

1 beaten egg
1 c milk
1/2 c (One stick) butter
(I measure out the milk in a pint canning jar, then slice up the butter in it, then warm the milk till the butter melts. Makes it easy to mix into the dry ingredients.)

Mix the two bowls of ingredients together till all is moist, then fold in gently 1 and a quarter cups blueberries. If they are frozen move quick putting them into the baking cups, because the dough stiffens up from the cold berries!

Bake in lined muffin pans for about 15-20 minutes. These freeze well Makes 12.

I wonder if they could be made with all whole wheat flour...that'd make them OK for me.

Nah, fruit is overrated...

I have to decide if I'm going to stay on Atkins when I move, or just try eating more healthily.

Oh, FYI...I added a cup of blueberries...fresh ones that were pretty large. Adjust amount and carbs to taste.

This local store ships in blueberries freshly-picked from Michigan. I'm on their list to receive new ones when they come in. I was eating some from the last shipment last night and they were *so* good--*vey* good. I grabbed one handful thinking I'd just have a few. I ended up eating about half a dozen :) I have 10 pounds (for only $22!) coming in for the next shipment soon :)

Also have freshly-picked strawberries and cherries. Picked the strawberries myself--much cheaper!

He eats no fruit. Only OJ.

Give it a try with the whole grain...see how it works! Or maybe put a little of the almond flour in there...it's great stuff!

I like the whey powder because it's light...it lightens up the wheat flour, you know? I can make killer garlic cheese biscuits using plain whey powder, but can't afford the stuff so I rarely make them. They are only a carb or so a piece.

3 eggs, beaten
1 1/2 cup whey powder
1/8 c oil
1/2 c cream
1 T butter
3 oz grated cheddar cheese
2 T baking powder
1/2 tsp garlic powder

Preheat oven to 350. Mix all ingredients together. Dough will be almost like cookie dough. Drop by T onto greased cookie sheet. Bake 10-15 min, til slightly golden.

We pick our own! $2 a pound. We went last Sat and picked a little over 3 pounds worth. I'm been baking muffins and freezing them. And then Joshua, well...he puts a big dent in them. He practically sits and crams them in his mouth.

I told the guy at the blueberry field that we should weigh Joshua prior to picking so we'll know how much we owe afterward...he eats more than he keeps! The man laughed and said it was ok...they expected it.

Hey, g'nad...here's a thought... do blueberries grow where you live? Get this! The gentleman told me they have 90 blueberry bushes (I'm guessing on a couple of acres or so) and that last year he made $30,000 off them! And he only works on Tues, Thurs and Sat.

Chicken is cheap...so are beans, on sale vegetables, eggs...

If you were doing the later stages of Atkins, you'd probably be fine. And of course it depends on location, I guess. Here, beef (even ground beef) is expensive. May not be true there.
