See, that's what Matthew does, bless him! Without any brute force, he TRIES to eat the things I make, even when I am pretty sure he won't be able to! He puts a spoonful of say, mashed potatoes, in his mouth and before he can even taste it, he's retching all over the place.
I just make it, put it on his plate, (granted, not usually very much...just a spoonful) and then toss it in the trash when he's done.

I was the same way about liver. My family all loved liver and I would gag at one bite. Just couldn't eat it. My mom once made me sit at table until I ate it. I was there well after dark, and bedtime. Couldn't do it. I never made my kids eat anything. I would nudge them sometimes, but not force. My son's problem isn't with veggies, he eats them ok. He can't take gravies, especially white ones. Or anything else white and moogy, like mashed potatoes, or oatmeal.
The way I deal with it is - if they don't eat the good for you stuff, they don't get desert. (how can you have any pudding if you don't eat your meat)
