Rosie, any chance the series you're thinking of is the "Danny Dunn" stories? It wasn't an uncle he had, it was some goofball professor type, but the adventures sound similar.

That doesn't ring a bell at all. I'm thinking the last name started with "J". But it COULD have been a professor, possibly.
