Is it possible to replicate KFC in an air fryer. Well, what I did was look up the 11 "secret" herbs and spices that goes into Kentucky Fried Chicken and mixed them together with 2 cups of flour. After marinating my chicken thighs in a cup of buttermilk mixed with an egg, I ran the thighs through the mixture and cooked them in the air fryer. You can see my opinion of how close it came to KFC but I also double checked it with others a couple of days later to get their opinions as well.
RECIPE:
3 tbs white pepper
2/3 tbs salt
2 tbs garlic salt
1 tbs celery salt
1/2 tbs ground thyme
1/3 tbs oregano
1 tbs black pepper
1 tbs dry mustard
3 tbs paprika (or 4 tbs for a bit spicier)
1 tbs ground ginger
1/2 tbs basil
Mix with 2 cups all-purpose flour.
Marinate 4 chicken thighs overnight in 1/2 cup buttermilk with egg beaten in.
After running the chicken through the powder mix, spray with olive oil on both sides.
Cook in Air fryer for 30 minutes at 380 degrees and turn when halfway finished.
(Note: Using a spray bottle to apply olive oil will have a much better effect on surface texture than applying by spoon.)
“Just remember to use a spray bottle to apply olive oil.”
Avocado oil has a higher smoke point and doesn’t add any other taste to the recipe. That’s I use in my air fryer.
My taste buds detected the MSG. It has a salty chemical taste.
As "good" as gas station sushi?
I believe that some of these chains mix their oils. As a male, I try to avoid soy at all costs, so when I do get it I find it tastes chemical. Even more so with Rapeseed oil when I’m lied to.
Look at this, straight from KFC:
“KFC products are fried in oil which may contain the following: Canola Oil and Hydrogenated Soybean Oil with TBHQ and Citric Acid Added To Protect Flavor, Dimethylpolysiloxane, an Antifoaming Agent Added OR Low Linolenic Soybean Oil, TBHQ and Citric Acid Added To Protect Flavor, Dimethylpolysiloxane, an Antifoaming Agent Added.
In some restaurants, fish, chicken, and potatoes may be prepared in the same oil.”
The ‘fat is bad’ era killed good fried food in most cities and, imho, has contributed to an epidemic of disease.
LOL
I use avocado oil for my air fried french fired potatoes. In fact, I made two batches of it last night.
Oh no... Onion and garlic powders? Really?
I bought a mister bottle of evoo & I love it for evenly coating savory baked items. I usually do homemade oven fries from potatoes, but got lazy one night. I had a bag of ore Ida fries in the freezer. I missed them with the olive oil before I put them in the oven. A more delicious taste & crunch.
I heard the same about Hidden Valley Original Ranch Salad Dressing & Seasoning Mix.
PJ, did you get a larger air fryer than the one you had when you first posted about air frying?
I love KFC chicken. Thank you for the recipe. You can spray with olive oil or vegetable spray and bake in the oven. Now I want to warn people if they haven’t already experienced it lately that the breasts are full of little bone pieces that are hard to detect in the crispy coating. It wouldn’t be safe to feed a small child a breast unless you are able to remove the meat and not get those pieces of bones mixed in. They might not kill you but could get stuck in your throat and who knows what going through your digestive system? I wouldn’t give any leftovers or pieces to a pet either without getting those bony pieces out. Thighs are safer. But most people know not to give dogs the bones or bony pieces. Cats can get bones stuck in their throats. I had a kitten that got a turkey bone stuck in its throat snd had to have the vet remove itt. I think it was $75 back then. It would cost a lot more now.
Misted
Nice.
Ironically, I bought an air fryer this morning to make chicken thighs. Mixed results; just over cooked. My wife is already meal planning using it.
Too much salt for normal people.
I LOVE my air fryer frozen French fries ARE THE BEST in the air fryer!!
PFL
I should have followed your recipe.
I was trying to make my yogurt chicken on the air fryer. Just plain yogurt marinade, with crushed red pepper and cumin with salt and pepper. I just over cooked it.
I manage the Deli at Vons for a couple of years the smell of the grease from the fried chicken is impossible to get rid of I kept my uniforms in the garage at all times it was just awful!!
Just a touch...
It took me awhile to get used to the temperature of the appliance it cooks REALLY FAST so you have to be careful, it has a setting for French fries however that setting burns the fries you have stop it about halfway through the cycle!!
Fifty years ago I copied the guaranteed-to-be-authentic recipe for KFC chicken. It included a packet of dried tomato cup-a-soup in the mixture.
