That PEX stuff, they are using it for the whole house
but it was the wrong size and is being redone with a wider hose.
I am kind of scared to partition my HDD, if something goes horribly wrong I am likely out of luck.

I've never tried. I have, however, soldered a few connections together, including many in my hydronic heating system and quite a few in the plumbing.
Just clean the surfaces to be joined, with a wire brush or steel wool, put the flux on them and stick them together, then heat them up with a torch to well beyond ouch-hot and allow the solder to wick its way into the space between the metal of the two parts being joined.
The solder will even flow up against gravity through capillary attraction. If your metal is clean you should get good coverage and no leaks.
Yeah, I think the unions didn’t want it. But with earthquakes shaking building wouldn’t this form of plumbing adapt to our situation better than anything? I think so.

I did mean solder, but you need to use a torch for that as well and was what I meant. I don’t play with fire well.

A propane torch needn't be a scary thing. It's just a tool.
Think of it as a more compact and high-intensity hair dryer. But don't try drying your hair with it.
It does require practice, to get a feel for the heat and timing. That could be done with some of the scrap pipe that's being discarded. Use connectors, they're the cheapest. Cut the old pipe, clean it, and solder a connector in. Do a few of those until you feel confident, and you'll be doing wet-work in no time.
