Modern wheat is a "perfect, chronic poison," according to Dr. William Davis, a cardiologist who has published a book all about the world's most popular grain.
Davis said that the wheat we eat these days isn't the wheat your grandma had: "It's an 18-inch tall plant created by genetic research in the '60s and '70s," he said on "CBS This Morning." "This thing has many new features nobody told you about, such as there's a new protein in this thing called gliadin. It's not gluten. I'm not addressing people with gluten sensitivities and celiac disease. I'm talking about everybody else because everybody else is susceptible to the gliadin protein that is an opiate. This thing binds into the opiate receptors in your brain and in most people stimulates appetite, such that we consume 440 more calories per day, 365 days per year."
Asked if the farming industry could change back to the grain it formerly produced, Davis said it could, but it would not be economically feasible because it yields less per acre. However, Davis said a movement has begun with people turning away from wheat - and dropping substantial weight.
"If three people lost eight pounds, big deal," he said. "But we're seeing hundreds of thousands of people losing 30, 80, 150 pounds. Diabetics become no longer diabetic; people with arthritis having dramatic relief. People losing leg swelling, acid reflux, irritable bowel syndrome, depression, and on and on every day."
To avoid these wheat-oriented products, Davis suggests eating "real food," such as avocados, olives, olive oil, meats, and vegetables....

Eliminating these grains means no breads, cereals, flours, cakes, etc.
What's left? Vegetables and meats. Will you lose weight cutting down on carbohydrates? Sure because it means reducing caloric intake, at least for a while.
Davis did an interview with a Chicago paper last year and describes a “one cookie made me gain thirty pounds” reaction wherein someone who has avoided wheat eats a bit of bread and their appetite goes wild and they gain back weight lost.
Nothing new here, just someone selling a book.

I only use organic flour and make my own bread, usually about 3/4 whole wheat and 1/4 white, or thereabouts, and often toss in some barley flour.
My hub is skinny and muscular and if he doesn’t eat a lot of bread the weight drops off daily.
I agree. It’s the quality of the wheat that counts. Would the kind of wheat that was grown before they “messed” with it in the 1960s/70s be healthier? Maybe. But so would milk and plenty of other foods that are now GMO or otherwise tinkered with. We can’t eat “nothing”. And if people think meat is better; well the animals have been eating all those “poison” grains, much of it GMO soy and corn. Plus tons of hormones and antibiotics.
The best way to eat, generally speaking, is to eat home cooked food with simple ingredients and avoid preservatives, artificial colors, flavors and so on. Take more time (so I’ve heard, I never buy pre-made food) but it’s cheaper and healthier. And tastes much better.
I say this realizing what you mean entirely, but it’s back to the garden like my parents and everyone used to have in my area 25-years ago.
Squash, tomatoes, onions, peppers, fruits...
And throw in some fish, venison, beef, eggs...
not sure but their distillery masters are Scottish and all their equipment was made in Scotland and transported over... the website tells you almost everything... and has contact info.
Thanks for that link; that article is pretty meaty (ha!) in terms of understanding the underlying low/no-carb concept. I would like to have a little better control over what I eat; with this remodel, I am so under the gun to finish and usually work until I am crazy hungy, then go and stuff a burger in my face. I’ll be much happier when this project is done. (theoretically, 1 week, but this will be the baddest bust-ass week of them all—it’s been 6 months)

Oh, I am so sorry! How did that even happen? My wifi is wonky.
I’m not surprised. Chickpea flour is sold as an alternative to wheat flour, although using the beans directly would be cheaper and easier to find.
