i never could understand how they can do gene spicing and NOT be able to produce an image of it...

Chemistry picked apart the structure of molecules way, way before microscopy was competent to visualize them. Diagramming something isn’t the same as getting some sort of direct picture.

Scrunched up like a bottle brush. Diagrams stretch the longitudinal axis to make it easier for people to read them.

The helix looks much tighter than in most models.

Looks like a Fourier analysis could identify some interesting characteristics of DNA.

but how do they know if they get them in the right place/sequence, is it just in the general area or is it hit and miss or do the chemical bonds determine if it will splice properly or not

I think it works like a regular expression substitution in vi where you know what your desired context is

You might not want to do

:1,$s/foobar/raboof/

but rather something like

:1,$s/my context foobar more context/my context raboof more context/

There has to be a larger stretch in which the edit in question occurs, all chemically mediated of course.
