Matter and antimatter are always created (or destroyed) in equal amounts. But there appears to be a dearth of antimatter in the universe. What happened to it?

Yes. There are quite a few “little anomalies” that our scientific geniuses can’t explain. This is why they invent unobservable things like “dark matter” or “multiverses”.
This is actually theology.
It’s because of the explosive results when pasta and anti pasta touch.
I won't answer as to "multiverses", as I think those are indeed highly speculative. I think the best physicists who throw them out as a possibility will admit they are just a speculative answer to some things they can't explain.
Regarding "Dark Matter" - the whole point is that scientists ADMIT that they can't explain it. But the gravitational impact of something we don't understand is very observable, that's the mystery.
When we look at the rotations of galaxies, or the bending of light around galaxies, these things behave as if they have much more mass than we can observe.
Those things aren't theology. Sometimes scientists devolve into "science-ism", which attempts to substitute the disturbed personal opinion of some scientists for God. That is indeed awful.
My theory is that dark matter is neutrinos which have slowed down and gone into orbit.
One could theorize the same thing about a lot of libs...
