In my case, I'd have to say either whale at a restaurant in Iceland, or fried crickets when I was in Zambia.
The whale was delicious. The bugs....not so much.
The Bahamian nurses I worked with in NYC would bring curried goat for special occasions. Delicious.
All manner of raw fish and shellfish....doesn’t really seem that exotic to me.
Rattlesnake, Iguana, sea turtle eggs, guinea pig were kinda out there.
I’ve eaten far more exotic things but not in restaurants.
Was offered barbecued howler monkey once-—I passed.
Not too “exotic” but something I liked and have only had once- Pickled herring and Limburger cheese on a Saltine cracker with beer.
So where did you try ammonia or did you use it to rid your mouth of the taste of the fermented skate and found they were both identical?......LOL!
I had a reindeer sammich in Stockholm. It was really good.
Frog legs on a seafood platter at a fisherman’s wharf restaurant.
Fried crickets with lime, sea salt, and chipolte in Mexico and New York. Iguana in Aruba and Florida. Rattlesnake and rabbit sausage in Arizona. And of course, Rocky Mountain Oysters in Colorado.
Our best and oddest meals were eaten on boats not in restaurants.
2 decades ago, we took an afternoon evening/dinner cruise out of Puerto Vallarta. There were about 2 dozen of us on the boat. It pulled into a protect cove, and those of us who kayaked, kayaked. Spear fishers went after the local fish. About 30 minutes before dinner, a couple of fishing boats pulled up and the Captain and Chef negotiated with the fishing people for our dinner. They had all types of local fish including warm water lobster. A lot of the critters were still alive.
The crew grilled the critters or made ceviche from them.
There were a lot of margaritas around and cervezas. They made ice cream for dessert.
While we were in Maui, we took a similar afternoon/moonlight dinner cruise. They had Ahi Tuna and other local fish. The seafood was grilled, poked or ceviched.
One time we were staying at a supposedly 5 star hotel north of Mazatlan. My wife got the Mexican revenge the first night. While she stayed at/in our suite and recovered, I explored the beach. About 100 yards south of the Hotel was a shack that prepared fresh sea food, delivered from the ocean. I had lunch there and it was great. My wife came for dinner and enjoyed a simple grilled meal.
We had all of our meals there including breakfast, fresh egg
Egg Frittatas with a lot of seafood in the Frittatas.
We told the owner about our Puerto Vallarta evening cruise. He told us that on Friday evening they had private tables closer on the beach with all the grilled fish and ceviche we could eat for $15. We took him up on it and it was great. I brought a bottle of tequila for margaritas and to share with the staff and a couple of 6 packs of cervezas to share. The food was outstanding as was the company.
We considered buying a timeshare at Puerto Vallarto or Cabo.
You could not pay us to go to Mexico now.

Oh, we got us a comedian!!! I guess I should have said it tastes like ammonia smells! It was hard to get it past my nose into my pie hole, so I stopped at 3 pieces! :)

I make chicken stock with chicken feet. Always clip the nails.
I’ve had haggis which involves the intestines or bladder of some animal. It was not good.
I’ve had goat which tastes exactly like lamb. Heads of shrimp. Frog legs but those are NOT exotic.
Outside of that, I can’t think of anything.
In Suwon City, S.Korea, where my houseboy, Coo, took me for a traditional Korean dinner while stationed there with the USAF I had Kimchi,shrimp and “mystery meat” (dog?). I told him I would only go if he didn’t tell me what I was eating!
