Blue Cheese May Be Good for Your Health, Study Suggests

A study by the UK-based biotech company Lycotec found that blue cheese may have anti-inflammatory properties that protect against many diseases.

Blue cheeses like Roquefort and Bleu d'Auvergne are being credited with helping reduce cardiovascular disease in France.

The anti-inflammatory properties increased the longer the cheese was ripened, said the Globe and Mail.

AFP reported that the benefits of the cheese work best in the gut and just underneath the skin, which may help slow signs of aging.

The researchers said that blue cheese may be one factor in explaining the so-called "French paradox," long and healthy lifespans in France despite a high-fat diet.

"We hypothesize that cheese consumption, especially of moulded varieties, may contribute to the occurrence of the 'French paradox.' , the researchers said, according to the French Tribune.

"Moulded cheeses, including Roquefort, may be even more favourable to cardiovascular health."

France is considered to have one of the longest lifespans in Europe and one of the lowest rates of cardiovascular disease in the developed world.

The study was published in the journal Medical Hypothesis.

Yea, my family thinks I am cracy because I eat moldy cheese but I love my Stilton. $10 for a big hunk at Costco. The Krogers in north Fort Worth put in a large cheese shop but they sell Stilton for 5 times what it costs at Costco.

Yum cheese, crackers and a little wine sounds so good now.

Homemade Blue Cheese Dressing:
In a large mixer bowl place:
1 c Sour Cream (I use organic)
1/4 lb Blue Cheese crumbles
1 T vinegar (I use Bragg’s)
2 T minced sweet onion
Mix with electric mixer until smooth and refrigerate.
Yummy

YUM!!!! I LOVE blue cheeses... Maytag is great, but I think my favorite variation is Stilton! Oh great, now I have to go out and buy some today... I just thought of something that sounds incredibly yummy, and I must try it now!

I have some Oklahoma Joe’s Burnt ends... They smoke the entire brisket, flat AND point together for 12 - 14 hours using a dry rub, then they cut off the point, apply more dry rub, and then smoke the point for another 8 - 10 hours! So tender, moist, and enough flavor that you really don’t want to put any sauce on it!

I may try pairing some Stilton cheese along with those burnt ends!

Even if they don’t work together, it’s a good reason for me to eat them both separately!

Surprisingly so. Heard about it while watching The next Iron Chef, where one of the judges, Simon Majumdar opined that Bleu cheese and peanut butter was one of his favorite sandwiches.

I happened to have on hand a fresh jar of Adam’s Crunchy peanut butter and some local Idaho Bleu cheese. Laid on a thin slab of bleu and spread some Adam’s over that. Astonishingly good. Not great for your diet, but a real every-now-and-then treat.

Try it. You may be surprised. Works only with really good, fresh peanut butter and decent bleu cheese. Stilton’d work, too.
