I don't consider the gospels to be canonical, because I think they are corrupted by Pauline theology. I don't see that Jesus himself ever violated the laws of kashrut.
Well "shadow of things to come" was said after the Messiah ascended.
Also, why would you need a day of rest in heaven??

Interesting question. Both the Hebrew and Christian scriptures fortell a "new Heaven and a new Earth". Why a "new Earth", if we expect that the righteous will be in Heaven?
Heaven is timeless, unchanging, eternity. There is no "today is friday, tomorrow is the Sabbath." There is no "it's Yom Kippur in 6 months it will be Passover."
Rather all of the days and holidays and feasts all are a shadow of the real thing, the ultimate experience of existence with God. And that experience is, forever and always, the Father begetting the Son, who offers Himself to the Father, through the Spirit. We will be guests at this great outpouring of mutual love and this feast will outshadow anythign we have experienced.

Yes I agree "time shall be no more". I'm not smart enough to know how there will be new moons and Sabbaths when we're no longer mortal but I believe it for it is written.

And Samuel said, "Has the LORD as great delight in burnt offerings and sacrifices,

Repentance, and a return to obedience.
Do you mean that the Holy Spirit will give you the grace to be able to follow the Law?
What Law do you believe you are supposed to obey?
