Chicory is interesting to me having taken up the new hobby of roasting coffee. BTW, my blessing to you and yours. As I understand it it is like Belgian endive at a stage of development, or am I being stupid. Likely since right now my brain is spinning out of control. Thank you for your prayers. As to chicory, endive, and escarole.... no wonder people are confused because the names are used interchangeably! And there are a few types of endive, ranging from the tight oval (Belgian) to a head of frizzle (frisée). The chicory that people make coffee from is different from the endive ones.
The chicories are the blue part of the daisy family—their color being my main interest in them as a coffee-abstainer and one who thinks being a grown-up means never having to eat endive again!
