in today’s presentations, I am very distracted by the symbolism - the ox, lion and falcon

Is this tradition?
Also, was Dr. Luke martyred? Or did he die an old man like John?

Yes, very traditional. Each Gospel was aimed at and written for a different audience and had its symbol:

Matthew's for the Jews: the Angel
Mark's for the Romans: the Lion
Luke's for the Greeks: the Bull
John's for Everyone: the Eagle

Tradition has Luke living into his eighties.
