Is this tradition?
Also, was Dr. Luke martyred? Or did he die an old man like John?

Yes, very traditional. Each Gospel was aimed at and written for a different audience and had its symbol:
Matthew's for the Jews: the Angel
Mark's for the Romans: the Lion
Luke's for the Greeks: the Bull
John's for Everyone: the Eagle
Tradition has Luke living into his eighties.
