In many states where there is a 'School for the Blind', the students were trained as piano and organ tuners, since they relied on other senses than vision.
Many, if not most, earned a part-time income playing various church organs in two or more congregations on the Sabbath.
Also, many colleges and universities offer music as an academic major, with professors and students who are competent organists.

I'm a practicing RC, but when I play organ, it's at Protestant churches. They have better hymns and I get to improvise during the Offerings.
My own church is starting, slowwwwly, to throw off the mantle of hippie Vatican II guitars and incorporate better music.
Nothing beats 4 part harmony though.
