Instead of "Mother of God" one could make the same point by saying "The-woman-who-links-God-to-the-human-race-through-the-Incarnation-which-took-place-via-her-motherhood." But "Mother of God" is shorter and simpler. And *mother of Jesus* is more accurate and lines up with how the Holy Spirit inspired Scripture.
