Wouldn’t Christ have said “and upon you I will build my church”? or something along those lines?

That’s how pronouns work.
You know that Jesus did not speak English and that the Bible is a translation? Trying to parse God’s will and biblical history on the basis of pronouns and emphasis rather than totality of context is not the way to go.
Besides, the only reason this is a discussion is because Catholic haters are trying to change the history of the church. The church that Peter built, the Catholic Church, was founded by Christ, through Peter. Catholic haters had better find another reason to hate.
