Does that mean that anything that any Apostle wrote is something that you will accept?

Of course, as long as it has Scriptural warrant.

Can you define what this means in your theological world?

What it means in the non-Catholic world is that a stated position, proposed doctrine etc. must be backed up by Scripture. The Apostles' personal opinions don't mean anything to me. Just like Martin Luther's personal opinions hold no sway if not backed up by the Word of God.
