Casablanca (which I literally know by heart) I'll go along with that, but not because of Bogart. IMHO Claude Raines stole the show.
They are:
Citizen Kane
Sunset Boulevard
The Godfather I & II
Goodfellas
Raging Bull
The Apartment
Some Like it Hot
A Tree Grows in Brooklyn
The Treasure of the Sierra Madre
Lord of the Flies
Psycho
Monty Python and the Holy Grail
Annie Hall
The Producers
Young Frankenstein
The Seventh Seal
Children of Paradise
La Strada
Oliver
Cabaret

Oh- and for war movies- nothing beats the uncut version of "Das Boot"- a truly great film. The same director did "Stalingrad" which was badly cut and could have been much better. But it was better than "Enemy at the Gates" - another Stalingrad film but this one felt the need to insert a love story.
OMGosh, how can anyone choose just one, or even just a dozen? So many good films, here's a few that I don't think have been mentioned yet:
Heaven Can Wait(Beatty version)
The Philadelphia Story
Oklahoma(surely somebody has already mentioned it?)
The World According to Garp
Fantasia(but only at a big, classic theater with an excellent sound system)
Its a Mad, Mad, Mad, Mad, Mad, Mad, Mad, Mad, Mad, Mad World(I dunno how many Mads there are)
Big Night(the soundtrack is stupendous, I can't tell you how many parties that I've used most of the tracks(50's Italian/Big Band)
The Preacher's Wife(90's version, a Penny Marshal gem, mature subject handled in a most un-Hollywood way, its as if an evangelical wrote the script, and another must have soundtrack.)

Yes, "It's a Wonderful Life" is great, but "A Christmas Carol" (the one with Alistair Sim as Scrooge, 1951) is not only a great Christmas movie, it features a truly magnificent acting performance by Sim in his greatest role.
A Streetcar Named Desire (Marlon Brando)
The Hustler (Paul Newman)
Butch Cassidy & The Sundance Kid (Paul Newman)
Kiss of Death (Richard Widmark as a savage punk who pushes an old woman in a wheelchair down the stairs -- great film noir)
Throne of Blood (Akira Kurosawa's version of Macbeth)
Ikiru (Kurosawa again -- what a genius)
The Good, The Bad & The Ugly (Sergio Leone, Clint Eastwood and Lee Van Cleef -- it don't get any better than that)

Considering the trash hollyweird passes off as entertainment these days, here's a few of my all-time favorites.
My general rule: the farther from the mainstream, the better.
'The Corndog Man' - my new favorite; very difficult to find (try Blockbuster)
'Cinema Paradiso' - Italian film; very entertaining
'Avalon' - good family holiday fare
'Sling Blade' - excellent supporting performance by Dwight Yoakam
'Unforgiven' - Clint Eastwood at his best
'The Sixth Sense' - Bruce Willis' best work (IMHO)
'This Boy's Life' - nothing more frightening than Robet DeNiro in a boyscout uniform
'Bitter Moon' - Roman Polanski coaxes talent from Hugh Grant
'The Elephant man' - David Lynch directed; disturbing (but that's redundant)

Count me in on Chariots of Fire and Henry V.

I watched Pi again last night. (The title is actually the mathematical symbol for pi.) My son picked up the DVD on a lark at Best Buy, not having any idea what it was about. It is an amazing movie. It's pretty short, and it just pulls you right in. I checked Leonard Maltin and according to him, the movie was filmed in 16mm (it is black and white) and cost $60,000 to make. The movie was made in 1998. Mind-boggling. Highly recommended. NOT a chick flick.

Not humanly possible to choose just one... For starters, and in addition to "Last of the Mohicans":
"Chariots of Fire"
"Raiders of the Lost Ark"
"Empire of the Sun"
"Searching for Bobby Fischer"
"The Mummy"
