State health officials are warning consumers to avoid illegally produced queso fresco, a soft, white cheese popular with Latinos, in the wake of more than 50 reported cases of salmonella poisoning that have been linked to the cheese since January.

Actually, unpasteurized milk and butter and cheese made from it taste a whole lot better and are probably better for you. But you have to know and trust the source. Pasteurization is a necessary evil, mainly when food travels, when it is made in large factories, when you have a mass distribution system, and when you don't know the source or the middlemen.

In Vermont you can get fresh farm produce, but you have to know who you're dealing with. We have a quarter of a cow and half a pig in our freezer, and it sure tastes better than store-bought stuff. Same with fresh eggs and cheese.

Oh come on. Live a little! What's the big deal anyway? Why, I personally would not think twice about purchasing some cheese out of the back of some guys car, or from that old lady down the street with a hundred cats.

The best things are always homemade!

Heck, there's no finer dining than homemade bologna that the neighborhood taxidermist makes, slathered with some mayo whipped up by old Mr. Jones from across the way. Washed down with an ice cold glass of Mr. Smiths fresh milk, which he jokingly refers to as "dogs milk." Hoo boy, what a kidder he is!

Yes sir, the best grub can always be found right within walking distance of most folks homes, they're just to high falutin' or finicky to give it a try.

Cast off those aspersions and live a little, and enjoy the bounty of homemade cheese!

Flea market cheese? Never! It's not worth the risk. However, I have gotten some very good bargains on flea market oysters. Those same folks who turn up their noses at bathtub cheese are just too dense or something to take advantage of the good deals that can be had. Go figure.
