You are correct, but I don't those fish from the lower Sac.. They have so many health warnings on eating them, I just catch them and throw them back.

I looking forward to eating some fresh salmon caught in the ocean out here, very soon. I think the season begins or has started down in the Monterrey area. It should start up here soon. Fresh king salmon fillets charcoaled, with fresh oysters barbequed and some good french bread, ummmmmmmmm!

I like to catch the small trout from the streams in the Sierra after the snow melts. Those fish pan fried with some corn meal right from the stream are tremendous. A friend and I go up. He takes a little stove, and I take a small frying pan, and the oil and the corn meal. We catch two, gut them and fry them and eat them right by the stream. PETA maniacs fall down in massive seizures. However like you said, they are so good that way. You made my mouth water now, and I have to wait until after 1 May to go up there.

fillet da fish, flour da fillet, dip the fillet in a mixture off egg and milk and beer, dip the gooey fillet in cracker crumbs, toss da fillet in a pan with butter or a suitable oil and cook til golden brown...

I ate a lot of panfish and crappies, walleyes and bass cooked that way growing up in Minisoda..Happy munching :-)

I still think the ideal long-term solution is to split California into at least four states. This way, the socialist wackos would have the consequences of their political policies bite them sooner. As it is now, there are too many productive people to simply raise taxes on. If Davis had been able to put off this crisis for just two more years, he'd be a Democrat presidential front runner now.

I agree with the presidential aspirations. He was in free fall panic because he saw his chances slipping away right before his eyes. He absolutely would have been running as the governor from the most populous state.

That is my/our basic recipe for frying fresh fish.

I blend 50% corn meal with 50% flour, and the rest is like your recipe.

Small trout from the mountains in Oregon or Kali, don't need to be filleted. Just cook them and eat them bones and all. The larger 10-12 inch trout, just leave the bones in and cook them. Then, break the cooked trout open with your fork and pull out the entire skeleton. I seldom will eat trout bigger than 12 inches. They lose the flavor and you can be eating the breeding stock.

Salmon and hatchery steelhead, the bigger the fish, the better it fillets and tastes!

I can eat fresh fish at least one meal a day for days without getting tired of it. My wife during salmon season on the Oregon/Kali coast can eat it for lunch and dinner and then have smoke salmon for breakfast. We think that she descended from a Kodiak Bear!
