say Biden resigns, Harris steps in, how long can they go without a VP? I fully believe the left does NOT win in Nov so all this hand wringing is moot. But, just wondering how long they can go without confirmation? ie, can she/they put off selecting a VP replacement for a period of time?

A new VP would require a majority vote in both the House and the Senate. So that might rule out some potential picks.

That has happened twice before--to replace Spiro Agnew with Gerald Ford, and then, after Ford became President, to fill the vacancy in the Vice Presidency. Ford picked Nelson Rockefeller (whose son really was eaten by cannibals).
