Breakfast burritos
Serves 4
Ingredients
-2 teaspoons canola oil
-1/2 small red onion, diced (1 cup)
-1 -red bell pepper, seeded and diced
-1 cup drained, rinsed canned black beans
-1/4 teaspoon chili flakes
-Sea Salt and freshly ground black pepper
-8 eggs
-1/2 cup shredded pepper Jack cheese
-Nonstick cooking spray
-4 (10 inch) whole wheat tortillas (burrito size)
-1/4 cup sour cream or plain Greek yogurt
-1/4 cup salsa
-1 large tomato, (4 ounces) seeded and diced
-1 small avocado (4 ounces), cubed
-Hot sauce
Directions
* Heat the canola oil in a large nonstick skillet over a medium heat. Cook the onions and peppers until onions are softened and peppers are slightly charred, about 8 minutes. Add black beans and red pepper flakes and cook until warmed through, another 3 minutes. Season with salt and pepper and transfer to a dish.
* Whisk together the eggs then stir in the cheese. Spray the skillet with cooking spray, and reheat the skillet over a medium heat. Reduce heat to low and add eggs, scrambling until cooked through, about 3 minutes.
Spread each tortilla with 1 tablespoon each sour cream (or yogurt) and salsa, then layer with 1/4 of the black bean mixture, 1/4 of the scrambled eggs, some diced tomato and 1/4 of the avocado. Season, to taste, with hot sauce. Roll up burrito-style and serve.

Whoa! Not only do I have to catch up on the thread from last night, but now I see a breakfast bonanza!
I have to confess that I have already had my morning goodness. It consisted of Wiley Wallaby’s Soft and Chewy Classic Black Australian Licorice. What can I say....the bag was sitting on my desk lol.
The weather here is the same, lysie. Mild one day, thunderstorms, now freezing and a bit of snow. Tomorrow going mild again. It’s like weather menopause.
Now to catch up on everything....I’m going in, wish me luck.

Wow. Unbelievable nerve. What the heck is wrong with us, collectively, as nations? Why are our so-called leaders groveling to these invaders? They’ve really done a number on us that we feel guilty for having built great nations. This white guilt is going to be the death of us. Literally.

Can’t believe this. This is the exact brand of licorice I have in nightstand. I get it at Food Lion which is Our closest food store. When they have it get 3-4 bags. Often sold out

Norsky, I saw a tweet from Bruce Jenner, condemning all of the trans stuff being foisted on the kids. People were heralding him as some kind of hero for speaking out against it, referring to him as Kaitlyn! It made me sick, so, naturally, I posted my two cents worth, which was something like, “Thank you for speaking out? Are you people out of your minds? You got this whole evil nightmare rolling, BRUCE. On your head be it.”
Lol you can order bags from Amazon. It’s delicious. Perhaps not the best breakfast in the world, but yummy!

Probably the hollandaise sauce was the culprit making you sick.
I occasionally in Ohio ate breakfast at Bob Evans.
I always ordered the same thing. They had an omelette with Hollandaise and hashbrowns with fruit cup. Haven’t been to Bob Evans for several years. Wonder if it’s still on menu.
It’s easy to make but wouldn’t want to make it for just me. Doubt if son Jeff would even try it
