AZ is a big state...much of which is sparsely populated. But this is ridiculous. Or is it all part of some conspiracy?

What does that have to do with anything? They don't have to go door to door to collect the votes, they have them in hand. The only thing I can think is that they need the weekend so the ballots will not be under scrutiny for some time and they can do a midnight ballot dump. It certainly isn't about counting.

It is almost unbelievable... but they have recently got phone service and the interwebs, and no longer have to send information by horseback courier or the stagecoach route.
