While just a rule of thumb, price is an excellent indicator of greenness. All economic activity consumes energy, so price ends up being proportional to total energy consumption, and indirectly pollution. If solar and wind generated electricity plus backup ends up being more expensive in total than just natural gas, "green" energy is polluting more somewhere. To find out where just follow the money, all the way to China.
If you want to be comfortable, save money and not have to think about your heating system, a gas furnace with a H/P for temps above 40 to 45 F and the added bonus of A/C in the package, is the way to go. You could go with geo, but your outlay will be much higher up front.

Oh restaurants are just gonna love that. There is a reason they use gas for cooking. But it’s o.k., I forgot there will be no more restaurants due to lockdowns, and the astronomical increase in food prices because of Biden’s energy policies.

TY, we have been looking at solar/battery/elect backup 12 or 24 volt mini split systems for heating /cooling.
Also going to build a few pepsi can static solar air heating boxes, and checking out rocket stove builds using pellets. for heat.
though for now we have gas and elec, we know that costs are going to blow out sooner than later making these projects now more viable.

I was wondering what a commercial hob would cost as well. I knew they were cheaper than what I have but wasn’t expecting to see this:

I’ve had an induction cooktop for 30 years. The improvement over that time have been tremendous.
BTW - professionals use whatever works . I see a lot of them at the All-Clad (cookware) factory sale. All-Clad has expanded their induction ready lines because of them.

donut, I can taste a difference
between how the two different
steaks were prepared. Price is

can cook a $20 steak that will

My place was more of a deli than
that of a high end steak house,
but I had a few patrons that
drove many miles just to eat
dinner at my tables.
Higher end restaurants that you
describe are mainly looking at
the bottom line and a name.
They take every opportunity to
increase that bottom line at the
expense of their customers.
Electricity is cheap and far
less labor intensive, and chefs
have come up with ways to
shortcut what true cuisine is.
All these panels plus another field of pproximately the same size have been covered with snow and ice from Sunday night to thursday. Some major melting happened this afternoon but all still coated with thin layer of ice.
Two years ago they had:
