Lots of reasons to have adjuncts. They don't get tenure. They're cheaper than full-time professors.
Perhaps more importantly, they supplement the regular faculty by teaching specialized courses in topics that none of the regular faculty have the skills to teach.
I've been an adjunct at several different universities during my career, always because I brought something that wasn't matched by the full-time faculty.
