If there was leftover roast, she’d grind it and add mayo and chopped pickles and we’d use that for sandwiches - loved that and now I’m wishing I had some. SC, I thought this was unique to my family! Still my favorite sandwich, though being a low-carber now I usually eat it as a wrap with butter lettuce.
We would always have roast beef on the menu before a family road trip so we could take these sandwiches in the car! Fun memories :-)

I made a double batch of meatloaf, last week, that lasted hubby several meals.
Besides dinner (first night)....he had ML sandwiches throughout the week. I even froze half of one, for later.
