Those engines were still turning as she went off the end. Still, to regain the necessary lift would have required automatic reflex action action and steely discipline to keep from pulling that nose up too fast and stalling her out as she started sinking to the sea. Thank God for being with them and the engineers of those carriers who build in a height cushion above the water line for contingencies like this one.
Yes they saved the aircraft and their own asses. Many sailors were injured in the incident, remember them. Human error incident.

If I recall during Carrier ops when you hit the deck and cable, full power is applied for reasons just like this one.
