’m caramelizing 5 lbs of onions with small sweet and hot peppers. Sipping on a Tomaiolo Chianti from Italy 2011. Will probably at some point add red sauce that I canned from the last time, and let that simmer. From there? Keep as a sauce or move it into a nice chili with lamb, turkey, pork and lean ground beef mixed in a nice Currie seasoning. YOu don’t need to ever taste test, just the smell tells you what you’re getting.
Interesting adding Currie—I will have to try that! Any other spices in the red sauce?
I use lots of Cumin in my chili—I don’t like it super hot.
