The video starts out a bit cheesy but I love the sentiment: Hey you dummies! Thats not what Christmas is all about! And it is a beautiful rendition.
I also like this very much:
The Civil wars "O Come O Come Emmanuel"
I love this by She and Him the first new Christmas music CD Ive bought in many years. I love the simplistic and very stripped down sort of retro arrangements and who doesnt love Zooey Danchell! Shes just so cute!
She & Him - Have Yourself A Merry Little Christmas
I hope the wood is stacked and covered.
We got like 3/4” ice a couple weeks ago and lost a lot of trees.
Things did not thaw out completely for a week.
This week? 72 deg.
Go figure.
2 cups dried beans
2 leeks, white part only
1 stalk celery, minced
1 carrot, minced
1/3 cup celery leaves, minced
6 tbsp butter
1 tbsp flour
1 lb smoked ham hocks
1/4 cup minced parsley
1/8 tsp mustard seed
1/3 cup dry sherry
1 tsp salt
In a large saucepan cover the beans, rinsed and picked over, with 6 cups of water and let stand overnight.
Add 4 cups of water, bring to a boil over moderate heat, and simmer the beans, covered, for 1-1/2 hours. Mash the beans with a potato masher if desired.
In a kettle, cook the leeks (well washed), celery, carrot, celery leaves in butter until the vegetables are softened. Add flour, and cook the mixture, stirring, for 2 minutes. Stir in the beans, including the liquid, ham hocks, 2 cups of water, minced parsley and mustard seed.
Bring the mixture to a boil over moderate heat, and simmer, covered, for 3-4 hours. Add water if necessary to keep the beans covered.
Cook the hocks in a pressure cooker. Transfer the hocks with a slotted spoon to a bowl, and remove the meat from the bones. Stir in the meat, sherry and salt, and heat moderately, stirring all the while, until it is all mixed in.
A note from Mom: You can freeze this one for the winter.
1 lb lentils
5 cups water
1 tsp salt
1 lb Italian sausage
2 medium onions
1 clove garlic, crushed
1 large carrot, diced
1 stalk celery, thinly sliced
bay leaf
Combine the lentils, water and salt in a large pot. Bring to a boil, cover and simmer for 30 minutes.
Remove the sausage from the casing, and brown in a skillet. Remove the sausage from the pan. Saute the onion and garlic in the sausage fat.
Add the sausage, onion, garlic, bay leaf, carrot and celery to the lentils. Stir and continue simmering to desired consistency.
