If you ever come to North Carolina, let me know and we'll tour the state from Wilson to Lexington. I'll show you the proper varieties of 'que.

For the uninitiated, there are two major kinds of North Carolina Barbecue: Eastern and Western. We have our own little civil war between the factions.

Personally, I really like a third kind. You haven't tasted pork like comes from John Pulliam's.

The way American southerners 6ar6ecue meat, it is slathered with 6ar6ecue sauces whose flavors would make me shudder to think of adding mustard, and I LOVE mustard. I even eat it on eggs. If the chef left off the traditional sauces, then mustard would go very well.
