I've never had a vinegar-based BBQ sauce. Sounds kinda good.

OTOH, I'd like to try South Carolina's mustard-based BBQ. That sounds good too.

I've had them both and enjoyed both. However, neither holds a candle to Memphis-style BBQ.

Down here in SC, there's a barbecue place that offers both tomato-based and vinegar-based barbecue. I usually mix them together for the best effect.

I've never seen a mustard-based sauce, though.

1 cup cider vinegar

2 tablespoons salt

1 tablespoon brown sugar

1 teaspoon cayenne

1 teaspoon red pepper flakes

I had some mustard based in St. Petersburg Florida. It was great.

Check out "Carolina Treet" sauce. I was turned on to it several years ago and buy it over the 'net. It is mostly a thickened paprika, oil, salt, and spice sauce with vinegar but no sugar. It does not burn so it is a cooking and marinading sauce. The kids demand it on chicken wings. I and my wife like it too.

I was in North Augusta, SC in April, and ate at a Bobby's Best Barbeque Buffet somewhere near there. Being a CA boy raised on Love's and Chris and Pitts, I was a bit shaken by the yellowy-orange barbeque sauce on the pulled pork.

It was a vinegar base, and tasted very strange. The whole meal was weird. A guy in his nineties was playing an old Hammond organ in the corner, and it sounded like he just started taking lessons. I expected Rod Serling to come walking in to the place and tell me I was never returning home again. But I got to see the Masters, so it was worth it.

Maurice's BBQ Online This was the place that Wal-Mart and other stores took his sauce off the shelf because of the Rebel flag. Maurice is based in Columbia,SC.

 The sauce is very good.

Pulled pork /w/ Carolina style sauce is the best.

To me, BBQ is like a Miss Universe competition. You may like some more than others, but they all are great.
