Now It's recipe time; A Barbecue for Two.
Barbecued Lamb Ribblets
Have butcher cut a 1 1/2 - 2lp lamb breast in half, cutting across bones. Place indirectly on BBQ about 3" from medium coals or heat up your gas grill to 325 degrees (slow mod.). Cut lamb breast into serving pieces of one, two, or three bones per piece. Sprinkle with salt and pepper. Bake 1 1/2 hour, uncovered. Pour off excess fat. Cover with Barbecue Sauce (below); bake covered 30 to 45 minutes. Garnish with lemon slices or wedges. This delivers approx 2 servings.
Barbecue Sauce
1/2 cup catsup
1/4 cup vinegar
1/4 cup water
1/2 tsp salt
1/2 medium onion, finely minced
Mix ingredients. Pour over ribblets. Makes 1 cup.
Roasted Sweet Potatoes
Rub 2 scrubbed sweet potatoes or yams with oil or butter and prick with fork. Wrap in heavy foil. Place on grill over hot coals. Bake, turning occasionally, about 1 hour, until tender. Unwrap; split lengthwise. Season with butter salts and pepper 4 servings
