And Texas Land & Cattle Co, http://www.texaslandandcattle.com, is a great chain, with outlets all over Texas and elsewhere such as in Phoenix. Alas, they took their Laredo Rib-Eye off the menu, but you can construct your own by ordering the Rib-Eye spicy and a side of cheese enchiladas. Wow.

Calhoun's on the Tennessee River, Knoxville, Tenn. Best ribs anywhere. Period.
