A night of cheese, a night to remember

It was the night of 12 cheeses, a gathering in which the main fare was fromage, the aged offerings of cow, sheep and goat's milk. The cheese was spread on slices of crisp bread, served with glasses of red and white wine.

It was a cheese tasting held in Glen Burnie Town Center, where Anne Arundel Community College has recently opened kitchens and classrooms used by the college's Hospitality, Culinary Arts and Tourism Institute. I was among the handful of restaurateurs, college administrators and cheese heads who had gathered to be led by Jack Fromberg down the butterfat road.

They were attorneys, he said, who had given up their law practice to pursue their love of cheese.

We don't need to kill all the lawyers, we just need to feed them cheese!

Cut onion and cheese into cubes, set aside. In a cast iron skillet or pot, brown mooseburger. Add onion and cook till the onion is done, then drain. Start adding the cheese cubes and part of the salsa, stirring as the cheese melts to prevent scorching. Add remaining salsa and set on back of stove to keep warm. Have a bowl of tortilla chips handy and this will disappear! You choose the degree of hottness by your salsa choice.

Caribou or bear burger can also be used and will provide their own unique flavors.

We have this thing in DC called Fresh Fields. Anyway, they are like the Whole Earth Catalogue grocery store. They have a separate cheese counter (like some markets have a bakery, which they also have.) Nothing but cheese.
