I don't really know what the Eastern Orthodoxen say that the elements of the Remembrance Supper are, or what the ordained partaking of them represents.

Well; from all the passages I can find in the NT; it appears to be a fairly normal Passover meal.

That is correct. My take on it, too. The Galilean Passover was traditionally held the evening before the Passover of the Judeans. Jesus, our Passover, was executed on the Judean day of preparation, 14 Nisan, the sixth day of the week in 33 Anno Domine.
