“How could we ‘disobey’ something we have no ‘knowledge’ of?”

Ok. I will not debate whether “disobey” correctly describes sins of ignorance. My meaning is that there is a distinction between willful sins and sins of ignorance. Willful sin results in hardening of the spiritual heart and being deceived.

Yes; this is quite true.

Even our secular courts say: "Ignorance of the law is no defense."

Sins of ignorance are covered in the OT as well.
